Banana Bread Protein Pancakes

These Banana Bread Protein Pancakes are a nutrient-dense, protein-packed breakfast option that supports energy, muscle health, and overall well-being. Made with oats, cottage cheese, and eggs, these pancakes are rich in protein, fiber, and essential vitamins. The bananas add natural sweetness and potassium, while the chocolate chips offer an indulgent touch, making these pancakes a delicious yet health-conscious choice. Perfect for busy mornings, this recipe is quick to prepare and can be meal prepped for the week.

Servings: 3-4

Ingredients

  • 1 cups rolled oats
  • 1 cups cottage cheese
  • 2 pasture-raised eggs
  • 1 tbsp maple syrup
  • 3/4 tbsp baking powder
  • 2 overly-ripe bananas
  • optional: cinnamon
  • 1/4 cup chocolate chips 

Instructions

  1. Blend the Ingredients: In a blender, combine oats, cottage cheese, eggs, maple syrup, baking powder, and bananas. Blend until smooth.
  2. Add Chocolate Chips: Stir in chocolate chips with a spatula.
  3. Cook the Pancakes: Heat a skillet on medium heat. Spray pancake rings and pour the batter into 3-inch rounds. Cook each side for about 3 minutes or until golden brown.

TIP: These pancakes can be stored in an airtight container in the fridge for a few days.
